Asian-Slaw-With-Coconut-Water

We are going to ferment packaged coleslaw mix with an Asian spin,. 

I am going to go ahead and put the coleslaw mix into our mixing bowl. 

I am going to add 1/2 c. of chopped onions to it. I am using pre-cut onions, right from the produce section of my grocery store to make this a super fast recipe. 

Next, I am going to add 1/2 tsp. of crushed red pepper flakes. Go ahead and mix everything up well. 

Now it is ready to load into our Probiotic Vegetable Fermenting Kit. 

When you get a little over half way with filling the jar, stop and we are going to insert 5 star anise seeds. These can be placed in the viewing window of the jar to make a pretty presentation should you want to use these as a gift since that is the time of the year - or just for yourself to enjoy! You can find star anise at specialty grocery stores or health food stores. You wouldn’t have to use the star anise but it gives a nice mild licorice flavor. 

Go ahead then and put the rest of the ingredients into the jar. 

What makes this have a unique flavor is that instead of using water for the brine, we are going to use coconut water. Put 1 1/4 c. of coconut water and 1 T. salt into a jar with a lid. Give a good shake to dissolve the salt. You can use pure water if you don’t have coconut water. 

Pour the coconut brine into the jar, covering the ingredients, and filling it all the way to the top allowing room for the floating brine cup. If you are short coconut brine, just mix up a little plain brine with water and salt. You could use 1/2 c. water and 3/4 tsp. premium salt if needed. 

Then install the rubber gasket into the lid, and thread the lid onto the jar. Pour water into the air-lock up to the max line and give it a twist into the lid. 

And there we have it. Another pickle recipe made without a knife! A slaw this is gonna have an Asian flavor. 

This should be done in four days at room temperature. You will want to try it! 

We have a customer that reminded us that this is the only thing she makes. It made us want to share it!
