Fast Holiday Kraut makes it so because we don't need a knife or cutting board.

How can this be?

Many supermarkets are now offering pre-washed and shredded cabbage and vegetable mixes for super convenience.

For this 1 pint recipe we need:

1-1/2 bags of shredded green or red cabbage

1 tsp. caraway seeds

1-1/2 tsp. ground sea salt

In a bowl mix the cabbage with the salt and squeeze for several minutes. Wait a few minutes and repeat until you develop a juicy mix

Toss in the caraway seeds and mix

Pack it into a clean one pint, wide mouth mason jar until a couple inches from the jar lip. Add in all the remaining juice. Reserve any excess cabbage for another use like a salad or slaw mix.

Lock down the Perfect Pickler Fermentation Kit  according to video directions

Rest the jar in a bowl at around 70º for 4 to 6 days. Taste, and decide if it is sour enough, or recap and continue for another couple days.
