    For low-salt fermentation, such as with the Perfect Pickler™, green beans need to be lightly blanched for 3-1/2 to 4 minutes, followed by a plunge in ice water to cease cooking. You still want them to be slightly crispy.

    Snow peas and sugar-snap peas if still fresh and edible out-of-hand, do not require blanching.
