If fresh spring peas set off a comfort bell, here is a recipe that is quick and sure to please. This style of fresh produces a pickled salad that can be served as a side dish right out of the the Perfect Pickler™, or added to greens, grain or pasta salads.

Use flash frozen peas. Look for bags that are uniformly loose, without clumps of frozen peas. Clumps are a sign that the peas were thawed after they were frozen. For ease feel free to use pickled pearl onions. If you like use raw onions and peel.

For the adventurous there is a unique spice I use for a quick onion, garlic flavor. It is called asafoetida; a flavoring obtained from a giant fennel-like plant that grows mainly in Iran and India. 

Makes 2 Quarts

 

Ingredients:

1-1/4 LBS. frozen spring peas (20 oz.)

1  8 oz. jar pearl onions, drained & rinsed

1/4  tsp asafoetida (or 1 tsp each onion and garlic powders)

1  tsp white pepper

brine solution (refer to pages 6-7 in Perfect Pickler Instruction-Cookbook)

 

1/4 cup fresh mint, chopped

 

Instructions:

Combine water and salt in the Perfect Pickler. Add all the ingredients except for the mint. Lock down the lid per instructions. Add mint when serving.
